Easy & Quick Vegan Comfort Meals
When it gets cool out, it’s time to pull out the comfort foods. Comfort doesn’t have to mean time consuming or hard to make. Nope, a nice soothing plant-based meal can be whipped in no time. It’s time to curl up in front of the television or with a great book. Now is not the time to spend all day in the kitchen.
Here are great quick, vegan comfort meals that are sure to please you and your family.
CREAM Sauce Pasta
Making Cream sauce pasta is about a personal as making Mac n’ cheese. You have to find the formula that works for you. Here are a few that use different ingredients to make the base. Our favorite is a cashew-based recipe made from soaked cashews. However there are many more:
Vegan Marry Me Chicken - Made with cashew cream and vegan evaporated milk. On our TikTok page
Vegan Chicken Parmigiana - We used Fried/Air Fried Dr.Praeger’s Perfect Turk’y burger to make vegan chicken patties and cashew cheese on our Instagram page. You can always skip making your own and buy vegan Alfredo from the jar.
Vegan Spinach Alfredo - We used nutrimental yeast, garlic, potatoes, and cashews. This makes a creamy “cheesy” sauce.
Here’s a live video of Eggplant Pirogue & Pasta
This is made with coconut milk.
It’s best to play around with the different flavors and textures to find out which cream based suits you.
As for the protein, you can try mushrooms, vegan shrimp, meatless chicken (there are vegan & vegetarian choices in brands, so take note of what you are buying), or Gardein chick’n strips.
Put the seasoned protein together with your cream sauce, and pasta & you have a delicious meal, in not a lot of time. Ooooh soooo comforting!
Chili
Chili is always a win for comfort. The spicy beans goodness warms your belly and your soul.
Salisbury Steak
Salisbury steak calls to mind cafeteria lunch and winter weekday dinner. Plant-based salisbury steak is just as soothing as the beef one that you may remember.
Étouffée
Did you know that Étouffée is really just fancy gravy? What’s more satisfying than some really great seasoned and stuffed gravy with rice. I can’t thing of one thing better.
Mushrooms are a hit in our Facebook group. Here is a great recipe using mushrooms, étouffée.
