It’s high in protein, takes flavors well, and can be shaped and seasoned to mimic pork chops, glazed ham, or roast turkey. Each dish uses vital wheat gluten as the structural ingredient, with tips on seasoning, shaping, cooking, and finishing to achieve a satisfying centerpiece.
Before you start — vital wheat gluten basics
What it is: Vital wheat gluten is concentrated wheat protein used to make seitan. When hydrated and kneaded, gluten develops a chewy, meat-like texture.
Ratio guide: A common base is 1 part dry vital wheat gluten to about 0.6–1.0 part wet ingredients by weight, depending on desired density. For a lighter texture, use more liquid; for firmer, more gluten.
